How important is to for you to be based in the canton of Vaud?

"It's very important, because the Lausanne region is extremely well situated in the heart of Europe and French-speaking Switzerland. I couldn't be better placed!"

You would expect to find an establishment with a worldwide reputation like yours in an international capital. Why did you choose Crissier?

"You don't have to be in the centre of a capital city to create great cuisine. Quite the contrary! Here I can work in excellent conditions and in an exceptional setting. I can't see myself in Paris! People have been coming here from around the world for 40 years to be dazzled and to enjoy themselves. I took over the establishment from Freddy Girardet 10 years ago, and his reputation continues to attract an international clientele of around 30% of the total."

What is it that ties you to this region?

"I come from the Joux valley, in the Vaud Jura. I have my roots in the canton of Vaud. I feel at home here. This region has an extraordinary heritage and diversity, in terms of both its nature and its culture. The people have that Latin touch, which means they like to enjoy life and make the most of the pleasure in life."
